OUR STORY
In 2020, our founder, Monty Tremlett, relocated to the vibrant city of Oaxaca, Mexico, where he uncovered a rich tapestry of culinary experiences rooted in nature. Inspired by the region's diverse flavors and traditions, Monty collaborated with some of the best chefs in the state to bring our vision to life. Together, we create exquisite dining experiences amidst Oaxaca's breathtaking landscapes, celebrating the art of fine dining in the wild.
OUR CUISINE
Our expert chefs venture from Argentina, France and Mexico. Highly trained in Michelin Star restaurants and even Japanese Nikkei cuisine, each add a variety of specialities to our seasonal menus allowing for a fusion between Oaxaca and the world beyond.
We work closely with local farmers, fishermen and artisans who harvest and produce outstanding products at the peak of their ripeness and flavor.
